This year we are offering a seven-night, eight day
trip in July for the Guelaguetza celebrations. A week full of festivities mixed in with cooking classes, market visits, and all that Oaxaca has to offer - it's colorful, bustling, vibrating life and culture of it's people. This amazing week will include the Guelaguetza celebration of "el Lunes del Cerro" (Monday on the Hill) held at the amphitheater offering magnificent views of the city. The trip led by Ron Kent a professional chef, educator
and along with Zaida Maria Kent, manufactures of authentic Oaxacan
Food products based in Palo Alto, California. Zaida, a native Oaxaquena,
who offers keen insight to her native city. The trip - with emphasis
on the foods and culture of Oaxaca and surrounding areas at this
special time - promises to be a unique and exciting opportunity
to explore the culinary and cultural traditions "on location"
in the villages, homes and restaurants with in the culture and subcultures
in which they evolved.
This July 2010 our program will have a class
component with time scheduled for instruction from Chef Kent and
a host of guest Oaxacan Food expert Artisans - including an opportunity
for hands-on work with local ingredients. After an initial orientation
dinner and introduction on the first day, the remaining five days
of the program will be intensively scheduled from morning until
night (please see itinerary). This is truly a culinary and cultural
immersion program.
The Following are some notes
and specific details of the trip.
Fees - All classes, lectures and tasting;
at least two meals per day, lodging and all local transportation
per itinerary is included in the course fee. The cost of the trip
is $2850. per person based on double occupancy. A single occupancy
supplement is $600. for six nights. Participants must provide
their own transportation to and from Oaxaca. No reductions will
be made to any parts of the program in which you choose not to participate. Children are welcome.
Oaxacan Foods - Culinary Travel is designed
for the culinary professional, as well as, the non-professional.
For the non-professional, please describe the depth of your culinary
interest and expertise on the enclosed registration form.
Registration and Payment - Please complete
the enclosed registration form and return it to us with your payment,
including single supplement (if applicable). Because of the enormous
interest in this course, we will be confirming final registrations
in the order in which they are received. Please see the Price section
on the registration information sheet for deposit fees. We have
only 12 spaces available on this 2010 trip. We encourage
you to register and return the form to us by fax or email as soon as possible

Payment is accepted via Paypal on this site. If you
are paying by check, fax or email your registration form and then mail the
signed original with your check to the above address. Checks should
be made out to Oaxacan Foods. If you want to confirm your registration,

Cancellation & Refund Policy (see registration
form) - Notification of cancellation must be received in writing
from the participant. The cancellation fees may be waived in the
event that a replacement is found for your trip space(s). In the
event that the trip must be canceled by Oaxacan Foods (see registration form), all
fees will be returned.
If trip cancellation from your side is a concern -
for whatever reason - you should invest in travel insurance.
Your travel agent is likely to have a short-term policy they can
recommend.
Additional Information - Once you have completed
the final registration process and we are in receipt of your deposit,
we will mail additional information to you. At that time we would like to schedule a pre-trip get together to discuss expectations and any questions that you my have. Appetizers and refreshments will be served. We look forward to speaking with
