Tonight, Chef Ron Kent will introduce a menu of some of the most popular casual dishes in Mexico. Memelas - hand pressed Corn Tortilla topped with Black Beans, Mole Negro, Queso Fresco, Cabbage, Guacamole, and Salsa; Chorizo and Potato Molotes with Black Bean Puree, Queso Fresco and guacamole; Local Fish Ceviche; Tacos de Carnitas; and of course Churros, the Mexican Classic! Agua de Jamaica the refreshing, floral, hibiscus drink will be served.

Tonight, students learn proper purchasing, storing and handling of fresh fish. We will show how to filet and remove bones from a whole fish, and practice a variety of cooking techniques including baking, pan seared, roasting, grilling and frying.
